Maitake Mushroom & Mashed Beans
Pan-seared maitake mushrooms with creamy citrus mashed beans and roasted garlic. Who says a vegan meal can't have all the texture and an explosion of flavors? This dish will surprise even meat lovers!
Trim the top of <quantity>6</quantity> garlic heads to expose only the tip of the garlic cloves. Transfer to the air fryer
Drizzle each garlic head with olive oil and add salt to taste
Roast at <temperature>160<unit>°C</unit></temperature> for 15m until the tops are golden
Add <quantity>1⅓<unit>cups</unit></quantity> of cooked and drained white beans to a blender
Add the zest of <quantity>1</quantity> lemon
Add the juice of <quantity>1</quantity> lemon
Add salt and black pepper to taste
Add <quantity>¼<unit>cup</unit></quantity> of water and <quantity>1<unit>tbsp</unit></quantity> of olive oil
Blend on high speed until smooth
Remove the roasted garlic from the air fryer
Add <quantity>1</quantity> garlic head to the blender
Blend on high speed to incorporate
Transfer to an air fryer-safe container
Place in the air fryer at <temperature>160<unit>°C</unit></temperature> for 10-15m until warm
Add <quantity>2<unit>tbsp</unit></quantity> of olive oil to a pan over medium heat. Add <quantity>250<unit>g</unit></quantity> of maitake mushroom with the stems facing down, cover and cook for 4m until golden
Flip over, cover and cook until wilted and releasing liquid
Add flaky salt to taste, cover and cook until crispy on both sides
Remove the Mashed Beans & Roasted Garlic from the air fryer and spread a portion on a plate
Garnish with microgreens to taste
Plate the mushroom in the center and top with chili oil to taste
Finish with flaky salt and black pepper to taste. The maitake mushroom & mashed beans is ready
