Malabar Paratha
Malabar Paratha is a layered, buttered and flaky flatbread, that pairs perfectly with a curry or a dal! It can also be eaten um chutneys, gravies, pickles, salads, and many other dishes you could think of using this delicious flatbread.
Add <quantity>500<unit>g</unit></quantity> of all-purpose flour and <quantity>20<unit>g</unit></quantity> of white sugar to a stand mixer bowl
Add <quantity>10<unit>g</unit></quantity> of salt. Mix with a dough hook attachment on low speed for 30s to incorporate the ingredients
Raise the speed to medium. Add <quantity>1<unit>g</unit></quantity> of fresh yeast and gradually pour in <quantity>320<unit>ml</unit></quantity> of warm water. Mix the ingredients for 3m until a ball is formed
Add <quantity>15<unit>ml</unit></quantity> of vegetable oil. Mix on high speed for 3m until you obtain a silky dough
Drizzle vegetable oil over a clean work surface and knead the dough for 1m to form a smooth ball. Place it in a greased bowl and cover it with a cloth for 30m to relax
Divide the dough into <quantity>50<unit>g</unit></quantity> balls and roll them out until they are <quantity>¼<unit>cm</unit></quantity> thick
Make thin cuts in the center of the dough, without cutting all the way through. Brush the dough with melted ghee
Gather the strips together and roll them into a spiral
Place the spirals on a baking tray, cover it with a cloth and let them rest for 15m to relax
Place the dough on a piece of parchment paper and fold it over the dough. Flatten the dough by hand until it is <quantity>¼<unit>cm</unit></quantity> thick
Brush some ghee on a nonstick pan over high heat. Add the dough and cook until both sides are golden brown
Shape the bread with your hands and serve. The malabar paratha is ready
