Malcriado
Refreshing, with a perfect balance between sweetness and acidity, and with a base for a creamy foam, this cachaça cocktail is inspired by the classic whiskey sour. The name comes from the Portuguese expression "mal criado", which means ill-mannered, and it was chosen because this drink is a somewhat subverted creation of the original recipe of a sour. Here, it's made with cachaça, orange juice reduction, and aquafaba instead of egg white. It's perfect to accompany grilled meats, spicy chicken wings, cheese platters, and mixed nuts.
Extract the juice of <quantity>1</quantity> large orange
Sieve it into a saucepan and simmer over low heat until it is reduced to 2/3 of the original volume
Transfer to another container and let it cool down. The orange reduction is ready
Add <quantity>50<unit>ml</unit></quantity> of cachaça and <quantity>15<unit>ml</unit></quantity> of the Orange Reduction to a cocktail shaker
Add <quantity>20<unit>ml</unit></quantity> of simple syrup and <quantity>30<unit>ml</unit></quantity> of lime juice
Add <quantity>10<unit>ml</unit></quantity> of aquafaba and <quantity>1<unit>dash</unit></quantity> of bitters
Shake it with no ice until is starts to foam
Fill the cocktail shaker with ice cubes and shake until thoroughly chilled
Double-strain it into an old-fashioned glass filled with ice cubes and garnish with <quantity>1</quantity> candied orange peel. The malcriado is ready
