A light vegan marshmallow fluff that can be used to top any cake or mousse.
You can even try it on a sandwich with peanut butter!
Add ½ cup of aquafaba and ¼ tsp of cream of tartar to the bowl of a stand mixer
Whisk on medium low speed until the liquid starts to thicken. Turn to high speed until it forms stiff peaks. This can take up to 10m total
Add 100 g of white sugar and squeeze the juice of 1 lemon. Whisk until combined
Continue whisking until you reach the desired stiffness. The marshmallow fluff is ready
Enjoy it on top of your favorite dessert!
