Trim, peel and dice <quantity>2</quantity> onions
Mince <quantity>5</quantity> garlic cloves
Grate <quantity>1<unit>tsbp</unit></quantity> of ginger
Heat a pot with <quantity>2<unit>tbsp</unit></quantity> of ghee
Add <quantity>2</quantity> cinnamon sticks, <quantity>2<unit>tbsp</unit></quantity> of cumin seeds and <quantity>1<unit>tbsp</unit></quantity> of coriander seeds
Add <quantity>1<unit>tbsp</unit></quantity> of garam masala, <quantity>1<unit>tbsp</unit></quantity> of turmeric powder and <quantity>1<unit>tbsp</unit></quantity> of ground coriander seeds
Add the onions, garlic and ginger and stir
Add <quantity>400<unit>g</unit></quantity> of tomato passata, and stir, adding more water as needed
Add <quantity>2<unit>tbsp</unit></quantity> of tomato paste
Boil for at least 3m, adding salt to taste and more water if necessary
Add <quantity>300<unit>ml</unit></quantity> of heavy cream and stir for 10m until combined
Garnish with chopped coriander to taste. The masala sauce is ready
