Matar Paneer
Paneer cheese and green peas cooked with spices. An Indian staple, perfect to eat with rice or flatbread.
Peel and mince <quantity>2</quantity> garlic cloves
Peel and small dice <quantity>1</quantity> onion
Finely chop <quantity>½<unit>bunch</unit></quantity> of coriander
Cut <quantity>100<unit>g</unit></quantity> of paneer cheese into medium cubes
Add <quantity>3<unit>tbsp</unit></quantity> of clarified butter to a medium saucepan over medium heat
Add <quantity>2</quantity> bay leaves and stir until fragant
Add the onion and garlic and stir
Add <quantity>3<unit>tbsp</unit></quantity> of tomato purée and stir
Add a little water, <quantity>½<unit>tsp</unit></quantity> of turmeric powder, <quantity>½<unit>tsp</unit></quantity> of chili powder, <quantity>1<unit>tsp</unit></quantity> of garam masala, and <quantity>2<unit>tsp</unit></quantity> of cumin powder
Add the paneer and <quantity>1<unit>cup</unit></quantity> of green peas
Add salt to taste and a little more water to obtain a creamy consistency
Cover and cook for 10m
Add the chopped coriander and stir. The matar paneer is ready
