This mayonnaise can be used as any other mayo or as base to other recipes.
Add 25 g of egg, 1 egg yolk, and 1½ tsp of mustard to a tall container
Add 1½ tsp of red wine vinegar
Add 400 ml of grapeseed oil
Mix with an immersion blender on high speed until it gets thick and creamy
Season with black pepper and salt to taste
Add the juice of ¼ lemon>. Use the immersion blender to combine. The mayonnaise is ready
Enjoy using it in salads or sandwiches!
