Mayonnaise
This is our quick recipe for Mayonnaise which is a good base for a lot of different flavorings!
Add <quantity>1<unit>tsp</unit></quantity> of Dijon mustard, <quantity>3</quantity> egg yolks, and <quantity>½<unit>tbsp</unit></quantity> of apple cider vinegar to a tall recipient
Mix with a hand blender until homogenous. Add <quantity>1¾<unit>cups</unit></quantity> of vegetable oil in a thin stream. Continue blending until it is emulsified
If the mayo is too thick, add <quantity>1<unit>tbsp</unit></quantity> of water and blend again
Season with salt and ground black pepper to taste. Mix well to incorporate. The mayonnaise is ready
