This is our quick recipe for Mayonnaise which is a good base for a lot of different flavorings!
A simple sauce that can be flavored in a lot of ways always has a place in our kitchen.
This recipe uses eggs but they can of course be replaced with aquafaba or soy milk for a vegan alternative.
Add 1 tsp of Dijon mustard, 3 egg yolks, and ½ tbsp of apple cider vinegar to a tall recipient
Mix with a hand blender until homogenous. Add 1¾ cups of vegetable oil in a thin stream. Continue blending until it is emulsified
If the mayo is too thick, add 1 tbsp of water and blend again
Season with salt and ground black pepper to taste. Mix well to incorporate. The mayonnaise is ready
