Mayonnaise

This is our quick recipe for Mayonnaise which is a good base for a lot of different flavorings!
A simple sauce that can be flavored in a lot of ways always has a place in our kitchen.
This recipe uses eggs but they can of course be replaced with aquafaba or soy milk for a vegan alternative.

3Dijon Mustard
1tspApple Cider Vinegar
½tbspVegetable Oil
1¾ cupsBlack Pepper
to tasteSalt

Mayonnaise

Add 1tsp of Dijon mustard, 3 egg yolks, and ½tbsp of apple cider vinegar to a tall recipient
Mix with a hand blender until homogenous. Add 1¾cups of vegetable oil in a thin stream. Continue blending until it is emulsified
If the mayo is too thick, add 1tbsp of water and blend again
Season with salt and ground black pepper to taste. Mix well to incorporate. The mayonnaise is ready
