Menemen
A staple breakfast item in many Turkish homes and cafes, menemen is a medley that celebrates ingredients that grow in abundance in the mediterranean. As easy to make as it is rewarding, this is a great breakfast item made to share. Here, we used Turkish green pepper, but if you don't have it, you can use green bell pepper instead.
Dice <quantity>1</quantity> medium onion and transfer it to a bowl
Chop <quantity>1</quantity> deseeded Turkish green pepper and add it to the bowl
Roughly chop <quantity>1</quantity> tomato and add it to the bowl
Add <quantity>1<unit>tbsp</unit></quantity> of extra virgin olive oil to a pan over medium heat
Add the cut vegetables
Add salt to taste and cook until the onion is translucent
Evenly spread the vegetables on the pan and add <quantity>3</quantity> eggs. Mix to break the yolks and scramble the eggs
Remove from the heat. Adjust the salt if needed and plate it
Finish with extra virgin olive oil to taste. The menemen is ready
