Mezcal Coriander

Inspired by a trip to Mexico years ago, the Mezcal Coriander is a strong-tasting drink.
An amazing combination of the smokiness of the mezcal and the herbaceous fruitiness of the coriander, finished with the wildness of the ginger beer.

Place 20g of fresh coriander leaves, 1tbsp of ascorbic acid, and 500g of white sugar in a jug
Add 500ml of room temperature water and blend until the sugar is completely dissolved
Strain the syrup
Pass through a cheesecloth. The coriander syrup is ready
Place 45ml of mezcal and 30ml of the Coriander Syrup in a cocktail shaker
Add 10ml of fresh lime juice
Fill the cocktail shaker with 2 cup of ice cubes. Shake for 10-15s
Fill a glass with 1 cup of ice cubes and garnish with 3 cucumber slices
Strain the cocktail into a glass
Add a straw and garnish with a lemon wedge. The mezcal coriander is ready
