Spicy Barbecue Sauce
The quintessential Korean barbecue sauce. A sweet, spicy, and super umami sauce that pairs excellently with grilled meats and vegetables, sandwiches, dumplings... In short, incredibly versatile!
Peel and finely dice <quantity>1</quantity> medium ginger piece
Place a pot over medium heat. Add <quantity>1<unit>cup</unit></quantity> of rice wine vinegar and <quantity>1<unit>cup</unit></quantity> of soy sauce
Add <quantity>½<unit>cup</unit></quantity> of gochujang and stir to combine
Add <quantity>1<unit>tbsp</unit></quantity> of ketchup and <quantity>1<unit>cup</unit></quantity> of brown sugar
Add the diced ginger and <quantity>2<unit>tbsp</unit></quantity> of minced garlic
Cook for 10-15m, stirring occasionally until it thickens. The sauce should resemble a ketchup texture
Add <quantity>3<unit>tbsp</unit></quantity> of honey to the sauce and stir to combine. Turn the heat to medium and bring it to a boil. Remove from the heat
Mix with a hand blender until smooth. The spicy barbecue sauce is ready
