
Mushroom & Chocolate Truffles

A delicious and unexpected combo of chocolate and mushrooms!
Adding mushrooms to desserts can work because, when they are dried, they get many different flavors that fit well together with chocolate and cream. Every mushroom has its own unique taste when dried, often tasting of umami and nuts.
The mushroom flour can be replaced with berry powder, dried herb powders or any other similar flavoring that you like. The dark chocolate chips can be replaced with chopped dark chocolate bars.
Add 1½ cup of dried mushrooms to a blender, and blend on high speed to obtain a fine powder
Sieve the blended dried mushrooms and discard the pieces left in the fine mesh sieve. The mushroom flour is ready
Add 200 ml of cream to a saucepan over low heat
Add 3 tsp of the Mushroom Flour
Add 75 g of honey and whisk to combine everything. Simmer until the cream is warm
Turn off the heat and add 500 g of dark chocolate chips. Mix with a spatula until the chocolate has melted and the mixture is homogeneous
Add 20 ml of cognac and mix it
Add 50 g of butter and mix it
Add 1 pinch of salt and mix it
Line a baking dish with cling film and spread the chocolate mixture over it
Gently tap the baking tray on the countertop to remove any air bubbles. Place it in the refrigerator overnight to set
Remove the chocolate from the baking tray and place it over a cutting board. Cover it with a piece of parchment paper. Flip it over and remove the cling film
Cut the chocolate truffles into irregular bite-sized pieces, according to your preference
Transfer the truffles to a dish and sprinkle them with the Mushroom Flour and flaky salt to taste. The mushroom & chocolate truffles are ready
