Conserving flavors when they are at their best is what we are always trying to do at our restaurant. This dehydrating mushrooms technique is an easy preservation method with versatile uses!
They can be utilized to enhance the flavor profile of various dishes, including broths, stocks, sauces, gravies, stir-fries, pastas, and risottos.
Before using them in a recipe, remember to rehydrate the dried mushrooms by soaking them in lukewarm water for a few minutes. Additionally, the soaking liquid can be saved and added to your dishes as it contains the intense flavors of the mushrooms.
In the hunt for preserving tastes from our surroundings, we found this method to be an effective way of incorporating mushroom flavors into many of our dishes.
This method works for all mushrooms. Here, we've used a mixture of chanterelles, porcini, and milk-caps, but feel free to use what you have available.

Clean 1kg of the mushrooms of your choice
Thinly slice the bigger mushrooms into smaller pieces, and leave the smaller mushrooms as they are
Transfer the mushrooms to the dehydrator tray
Close the dehydrator and set it to 45°C. Dry the mushrooms for 8h until they are completely moisture-free. The mushrooms are dehydrated
Enjoy! Use your dried mushrooms for pasta sauces, risottos, soups, and anything else you can think of!
