Nankhatai
Nankhatai, or ghee cookie, is a traditional cardamom-spiced Indian shortbread cookie, a delicious treat that pairs perfectly with an evening cup of tea. Possibly one of the easiest cookies to make at home with weighed ingredients!
Add <quantity>75<unit>g</unit></quantity> of whole wheat flour and <quantity>25<unit>g</unit></quantity> of gram flour to a bowl
Add and <quantity>10<unit>g</unit></quantity> of semolina flour and <quantity>60<unit>g</unit></quantity> of powdered sugar
Add <quantity>¼<unit>tsp</unit></quantity> of baking powder and <quantity>1<unit>tsp</unit></quantity> of cardamom powder and mix to combine everything
Add <quantity>75<unit>g</unit></quantity> of softened ghee and mix until combined
Cover and refrigerate for 30m to firm
Preheat the oven to <temperature>180<unit>°C</unit></temperature>
Divide the dough into <quantity>8</quantity> equal portions
Roll each portion to form a ball, and gently flatten them by hand
Add <quantity>¼<unit>cup</unit></quantity> of hemp seeds to a flat plate. Place each dough round on top of the seeds, and gently press it to attach the seeds. Place on a baking sheet
Bake for 10m until light brown. The nankhatai are ready
