These easy and delicious cookies feature a classic flavor combination of oats, cinnamon, nuts, and dried fruits!
They bring a comforting and warm sensation to your body and mood, and are enjoyed by both kids and adults as a perfect morning snack in any season.
The cranberries and raisins can be replaced with any dried fruits of your choice. The walnuts can be replaced with almonds or hazelnuts, while the cinnamon can be replaced with five-spice powder mix or pumpkin spice. The honey can be replaced with agave syrup or maple syrup.
Add 230 g of cubed butter and 200 g of brown sugar to a stand mixer bowl set with the paddle attachment
Mix on medium speed until smooth and creamy
Add 2 eggs, one at a time, and mix until well combined
Add 30 g of honey and mix to combine
Transfer the mixture to a larger bowl
Sift 190 g of all-purpose flour and ยฝ tsp of baking soda into the bowl
Add a pinch of salt and โ tsp of cinnamon powder
Add 250 g of rolled oats, 70 g of raisins, and 70 g of dried cranberries
Add 130 g of chopped walnuts and mix until well combined
Cover the dough with cling film
Place the dough in the refrigerator for 30m to chill
Preheat the oven to 170 ยฐC
Portion the dough into medium sized balls and place them on a baking sheet lined with parchment paper. Leave some distance between them
Place a ring cutter around each ball, and press them down to shape the cookies. Wet your hands so it won't stick
Bake for 15-20m until golden brown. The oatmeal cookies are ready
