Octopus Rice

Juicy and tender octopus cooked with Paella style rice! Octopus Rice is a delicious dish to cook for your loved ones, and pairs nicely with a salad and some red wine!
Inspired by the typical recipe from Portugal of octopus cooked with rice, this dish is also inspired by the Spanish "Paella".

Octopus Rice

Put a 500g cleaned octopus in a steamer. Place it over a saucepan with 1L of boiling water on low heat
Cover and steam for 35m until tender
Remove the octopus from the steamer, let it cool and reserve. Reserve the flavored liquid
Roughly chop 1 tomato and place it in a tall container
Add 6 chopped garlic cloves
Add 1 chopped onion
Add 2tbsp of extra virgin olive oil
Add vinegar to taste
Add salt to taste
Blend into a paste
Cut ¼cup of sea beans in small pieces
Add 1tbsp of extra virgin olive oil to hot pan
Add blended tomato mix. Reduce by ½
Add ½cup of long-grain white rice. Mix
Add 300ml of octopus steaming liquid
Add salt to taste
Simmer for 15m on low heat until al dente
Cut octopus tentacles
Add octopus tentacles to rice
Cook rice on high heat for 2m to caramelize
Add sea beans
Drizzle 3tbsp of extra virgin olive oil
Zest 1 lime
The Octopus Rice is ready. Enjoy!
