Oyster Opening

This is the basic process on how to open an oyster. Once the oyster is opened, you can serve it with lime and flaky salt or with different sauces, such as a mignonette.

Wash the oysters in cold water and place them on a tray lined with a kitchen towel

Place an oyster on a kitchen towel, with the flat side facing up and the pointed hinge side towards you. Insert the tip of the oyster knife into the hinge between the two shells

Gently wiggle the knife around the shells until they’re completely separated

Slide the knife under the oyster to detach it from the bottom shell

Remove any shell fragment from the oyster. The oyster is opened

Squeeze some lime juice on top of it and enjoy!
