Oyster with Shallot Vinaigrette
Oyster with shallots and honey vinaigrette. Simple, fresh and delicious! Pair them with a nice martini and enjoy with your friends.
Small dice <quantity>1</quantity> shallot
Transfer the shallot to a bowl and add <quantity>¼<unit>cup</unit></quantity> of sherry vinegar and <quantity>½<unit>tbsp</unit></quantity> of honey
Whisk to combine and set aside in the refrigerator
Wrap an oyster in a kitchen towel, with the flat side facing up and the pointed hinge facing out. Insert the tip of a oyster knife into the hinge between the two shells. Wiggle it slightly to open the oyster
Slide the knife under the oyster to detach it from the bottom shell and flip it
Plate the oysters on a bed of crushed ice and serve with a portion of the shallot vinaigrette. Garnish as you wish and serve with lemon wedges to taste. The oyster with shallot vinaigrette is ready
