Palo Santo Highball
This is a twist on a Whisky Highball. Very refreshing and aromatic!
Place <quantity>500<unit>ml</unit></quantity> of Scotch whisky in a tall container
Add <quantity>100<unit>ml</unit></quantity> of toasted sesame oil
Mix well and close the container. Place it in the freezer for 24h to infuse
Place <quantity>500<unit>ml</unit></quantity> of water in a pot over low heat
Add <quantity>500<unit>g</unit></quantity> of sugar
Add <quantity>35<unit>g</unit></quantity> of citric acid powder
Add <quantity>40<unit>g</unit></quantity> of palo santo
Simmer for 40m to infuse. Turn off heat and allow to cool
Strain the fat washed whisky through a coffee filter
Transfer the palo santo cordial to a bottle
Place <quantity>1</quantity> clear ice in a highball glass and add <quantity>30<unit>ml</unit></quantity> of Palo Santo Cordial and <quantity>50<unit>ml</unit></quantity> of Fat Washed Whisky
Complete the glass with club soda. The palo santo highball is ready
