Pan Tumaca
This recipe is a true Catalan classic! In this version, the Chef toasts the bread over an open flame, but if that's not an option, don't skip it—you can easily toast your bread in a pan or oven. It's incredibly simple, yet delivers far more flavor than you might expect. Perfect for breakfast, as a snack, or as a tapa to share with friends. Give it a try!
Toast <quantity>2<unit>slices</unit></quantity> of bread on a hot charcoal grill until golden brown on both sides
Cut <quantity>1</quantity> tomato in half and grate the pulp. Discard the skin
Add salt to taste and <quantity>1<unit>tsp</unit></quantity> of extra virgin olive oil and mix to combine
Serve a portion of the grated tomato on each toast
Top with extra virgin olive oil and flaky salt to taste
Finish with microgreens seasoned with extra virgin olive oil to taste. The pan tumaca is ready
