This cocktail is made of a blend of whiskeys to bring smokiness enhanced by the ginger's spiciness. Sweet, smoky, and citrusy with a bit of sweetness! Great to accompany smoked fish, spicy chicken, and dark chocolate.

Boil 500ml of water
Add 500g of honey. Cook until dissolved
Transfer to container in an ice bath. Stir until chilled
Fill glass bottle. Honey Syrup is ready
Boil 500ml of water
Add 500g of sugar. Cook until dissolved
Transfer to container in an ice bath. Stir until chilled
Fill glass bottle. The Simple Syrup is ready
Add 30ml of scotch whisky to cocktail shaker
Add 10ml of smoked single malt whisky
Add 25ml of honey syrup
Add 10ml of simple syrup
Add 20ml of lemon juice
Add 4 ginger slices
Fill cocktail shaker with 2 cups of ice cubes
Add whisky mix to ice cubes. Shake vigorously until thoroughly chilled
Strain cocktail into the cold glass with 1 rock ice
Season with smoked single malt whisky spray
Garnish with 1 slice of ginger
Squeeze orange peel
The Penicillin is ready. Enjoy!
