Pickled Bur Cucumber

Pickled Bur Cucumber can be stored for up to 2 months in the refrigerator.
Add 1 cup of white wine vinegar and 1 cup of sugar to a saucepan over high heat
Add 2 cups of water and 1 chili pepper cut in half
Add a pinch of salt and stir to combine and dissolve the sugar. Bring it to a boil and remove from heat. The gastrique is ready
Thinly slice 2 bur cucumbers
Add the chili pepper to the Gastrique. Place the bur cucumber in a bowl and cover it with the liquid
Cover with cling film and let it sit for at least 10m to pickle. The pickled bur cucumber is ready
