Pickled Chayote

Cut <quantity>1</quantity> large chayote into quarters. Peel and remove the seed
Finely slice it using a mandoline or sharp knife
Cut the sliced chayote into tiny cubes
Combine <quantity>1<unit>cup</unit></quantity> of water and <quantity>1<unit>cup</unit></quantity> of alcohol vinegar
Add <quantity>3<unit>tbsp</unit></quantity> of sugar and stir to combine
Add the chayote
Cover and refrigerate overnight
Strain it. The pickled chayote is ready
