
Pickled Enoki Mushroom

Wild enoki mushrooms pickled with aromats. Holds well in the fridge and is perfect for spicing up that next dish on the go.
If you are ever in Poland, ask your host about pickled mushrooms. Everyone searches for wild mushrooms and most often they are dried or pickled. Inspired by this tradition I decided to share with you a recipe for traditional pickled mushrooms.
Boil 500 ml of water
Simmer 2 cups of cleaned wild enoki mushroom for 5m until cooked. Remove from water
Add 200 ml of water to pot
Add ¼ cup of white wine vinegar
Add ¼ cup of white sugar
Add 1 clove of garlic, 1 tsp of salt, 1 tsp of black pepper, 1 tsp of allspice and 2 bay leaves
Add 1 small onion cut in rings
Bring pickling liquid to boil
Add cooked enoki mushrooms and simmer for 2m to infuse flavors
Transfer ingredients to pickling jar and cover with liquid while hot. Seal the pickling jar and store in the fridge until ready to use
