Pickled Enoki Mushroom
Wild enoki mushrooms pickled with aromats. Holds well in the fridge and is perfect for spicing up that next dish on the go.
Boil <quantity>500<unit>ml</unit></quantity> of water
Simmer <quantity>2<unit>cups</unit></quantity> of cleaned wild enoki mushroom for 5m until cooked. Remove from water
Add <quantity>200<unit>ml</unit></quantity> of water to pot
Add <quantity>¼<unit>cup</unit></quantity> of white wine vinegar
Add <quantity>¼<unit>cup</unit></quantity> of white sugar
Add <quantity>6</quantity> garlic clove, <quantity>1<unit>tsp</unit></quantity> of salt, <quantity>1<unit>tsp</unit></quantity> of black pepper, <quantity>1<unit>tsp</unit></quantity> of allspice and <quantity>2</quantity> bay leaves
Add <quantity>1</quantity> small onion cut in rings
Bring pickling liquid to boil
Add cooked enoki mushrooms and simmer for 2m to infuse flavors
Transfer ingredients to pickling jar and cover with liquid while hot. Seal the pickling jar and store in the fridge until ready to use
