
Pickled Pears with Yuzu Juice

A very elegant and flavorful pickle made with few ingredients, created to enjoy the pear season and honor nature. The pickled pears are easy to make and go really well with fresh sashimi, or as substitute for the regular cucumber pickle to bring some sweetness.
You can leave it in the brine for 20 minutes or overnight for an even more intense flavor. And if you can not find yuzu, it can be substituted with lemon juice.
This recipe was created to enjoy the pear season and as a way to honor nature and all of its freshness.
Add 7 tbsp of water and 3 tbsp of rice wine vinegar to a jar
Add 7 tbsp of white sugar and 1 pinch of salt
Add black pepper to taste and 3 tbsp of yuzu juice
Blend using a hand blender until the sugar is dissolved
Thinly slice 2 pears on a madoline
Pour the liquid over the pears. Let them sit for 20m until lightly pickled. Strain the pears or store in the liquid to intensify the flavors. The pickled pears with yuzu juice are ready
