Pickled Red Onions

Add 1 cup of white wine vinegar and 1 cup of sugar to a saucepan over high heat
Add 2 cups of water and 1 chili pepper cut in half
Add a pinch of salt and stir to combine and dissolve the sugar. Bring it to a boil and remove from heat. The gastrique is ready
Trim, peel and halve 1 red onion. Cut each half into wedges
Transfer it to a bowl and loosen the slices with your hands
Cover the onion slices with the hot Gastrique. Cover with cling film and let it sit for at least 1h to set the flavors and texture
