A simple, yet flavorful, syrup that has a bit of freshness from the cucumber and a bit of tartness from the pineapple.

It is super versatile and great to add an extra punch to your drinks!

  • Cut 3 3 cm thick slices out of 1 pineapple

  • Cut the pineapple slices into quarters

  • Thinly slice 1 Japanese cucumber

    Step 2
  • Add the pineapple to a medium saucepan

  • Add the cucumber

  • Add 100 g of demerara sugar

    Step 5
  • Add 150 ml of water

    Step 6
  • Squeeze the juice out of the remaining pineapple. Turn the stove on to medium heat

  • Simmer until reduced by ⅓. Crush the pineapple pieces with a cocktail pestle

    Step 8
  • Turn off the heat and let it cool down to room temperature. Strain into a bottle. The pineapple & cucumber syrup is ready
