Pineapple & Cucumber Syrup
A simple, yet flavorful, syrup that has a bit of freshness from the cucumber and a bit of tartness from the pineapple.
It is super versatile and great to add an extra punch to your drinks!
Cut 3 3 cm thick slices out of 1 pineapple
Cut the pineapple slices into quarters
Thinly slice 1 Japanese cucumber
Add the pineapple to a medium saucepan
Add the cucumber
Add 100 g of demerara sugar
Add 150 ml of water
Squeeze the juice out of the remaining pineapple. Turn the stove on to medium heat
Simmer until reduced by ⅓. Crush the pineapple pieces with a cocktail pestle
Turn off the heat and let it cool down to room temperature. Strain into a bottle. The pineapple & cucumber syrup is ready
