A frothy top-up, perfect for tropical or tiki-style drinks!
Here, we sieved the pineapple juice using a coffee dripper with a coffee filter. However, if you use the same method, make sure to use metal or ceramic drippers, so that the foam doesn't absorb residual coffee flavors. You can also use a fine sieve lined with cheesecloth.
We use this in our Melon Mule cocktail, which we will also teach here at CREME. You should definitely try it!
Trim and peel 400 g of pineapple
Cut it into medium chunks
Transfer to a blender and add 75 ml of water. Blend on high speed until smooth
Set a coffee filter in a clean coffee dripper and sieve the juice into a container
Place the dripper over another container and pour the sieved liquid back into the dripper
Repeat the sieving process until the juice runs clear
Mix the pineapple juice with a hand frother until foamy. The pineapple foam is ready
Use it to top tropical drinks. Cheers!
