Pistachio Paste
This is an extremely versatile recipe that can be used just like peanut butter, but with the sweet taste of pistachios. You can use it as a filling for tartlets or as a base for ice cream.
Place <quantity>320<unit>g</unit></quantity> of raw peeled pistachios in a blender on slow speed. Once the pistachios are starting to release oil, slowly increase the speed and blend until you have a smooth paste
Scrape down the sides of the blender, drizzle in about <quantity>3<unit>tbsp</unit></quantity> of canola oil to add some moisture, and pulse to a paste
Add more oil if the paste is still too lumpy and blend until you get a smooth paste. The pistachio paste is ready
