Pomegranate Dressing
Pomegranate Dressing is a vibrant, tangy and slightly sweet dressing that adds depth and freshness to salads, roasted vegetables, and even grilled meats.
Cut <quantity>1</quantity> pomegranate in quarters and remove all the seeds
Transfer the seeds to a blender and blend to obtain a juice
Strain the juice and discard the seeds
Transfer the juice to a saucepan and reduce it over low heat until the water has evaporated and the juice thickens. Transfer it to a bowl
Add <quantity>1<unit>tbsp</unit></quantity> of molasses
Add a pinch of salt and <quantity>2<unit>tbsp</unit></quantity> of extra virgin olive oil. Stir well to combine and the pomegranate dressing is ready
