Pork Sauce
An effortless pork sauce, perfect for drizzling over various pork dishes, such as crispy pork belly and pork schnitzel, or on sandwiches and drizzled over a nice toast or taco. Feel free to be creative and serve it with other meats, like chicken, or vegetables. Just keep in mind that it requires some pork fat and lard to make.
Chop <quantity>100<unit>g</unit></quantity> of pork fat into cubes
Chop <quantity>1<unit>bunch</unit></quantity> of parsley
Blend <quantity>100<unit>g</unit></quantity> of black peppercorns and <quantity>100<unit>g</unit></quantity> of coarse salt to obtain a fine powder
Add <quantity>100<unit>g</unit></quantity> of peeled garlic cloves, the chopped parsley, and <quantity>250<unit>g</unit></quantity> of pork lard to the blender
Blend until combined
Add the diced lard and mix until incorporated. Add the other <quantity>250<unit>g</unit></quantity> of lard and mix until you get a paste. The bairrada rub is ready
Transfer the Bairrada Rub to a saucepan over medium-low heat
Let it simmer for 10m to set all the flavor
Remove from heat and transfer to another recipient. The pork sauce is ready
