Potato Tortilla with Truffle
This is a creamy potato omelet recipe with the point of winter truffle. It is a simple dish, but full of flavor and with a pleasant texture. Perfect as a light dinner or for a starter.
Break <quantity>2</quantity> eggs into a bowl. Break <quantity>4</quantity> eggs and separate the yolks, adding the yolks to the bowl
Add salt to taste. Add <quantity>2</quantity> cups of the potato chips to the bowl
Break the chips into bite-size pieces and beat them with the eggs
Add water to a medium saucepan and bring it to a simmer
Add <quantity>1<unit>tbsp</unit></quantity> of vegetable oil to a small frying pan over medium heat until it just starts to smoke
Test the heat of the oil. The egg should cook immediately. Add the eggs and cook for 30s. Flip the tortilla with the help of a plate
Cook for 30s and flip it again. Cook for another 30s until the egg is golden brown and almost set. Remove from the heat and let it rest for at least 1m
Add <quantity>½<unit>cup</unit></quantity> of green peas to the water and cook until bright green and tender
Drain the green peas
Plate the tortilla and top it with the green peas
