Rabo de Arraia
A drink full of personality, yet super easy to make. This is a reinterpretation of an iconic Brazilian cocktail, the Rabo de Galo. The classic mix of cachaça, red vermouth and the bitter note of Cynar is complemented here by the sweetness of maraschino cherry and a hint of citrus from orange peel. Pair it with some nuts, dark chocolate or blue cheese plates and have fun!
Pour <quantity>50<unit>ml</unit></quantity> of cachaça and <quantity>15<unit>ml</unit></quantity> of red vermouth into a lowball glass
Add <quantity>15<unit>ml</unit></quantity> Cynar and <quantity>2<unit>dashes</unit></quantity> of orange bitters
Fill the glass with ice cubes and stir to fully chill and slightly dilute. Top it with more ice
Express <quantity>1<unit>piece</unit></quantity> of orange peel, rub around the rim of the glass and add to the cocktail. Skewer <quantity>1</quantity> maraschino cherry, rub around the rim and add it to the cocktail. The rabo de arraia is ready
