Fluffy, soft, yummy Polish pancakes served with sour cream and maple syrup. Perfect for breakfast or a snack during the day. It's a pure pleasure to be served, either hot or cold.
You can replace the maple syrup with any other syrup, honey, or even just icing sugar. It also goes well with fresh fruits and jams.

Add 200g of all-purpose flour and 2tsp of sugar to a bowl
Add 1tsp of cinnamon powder and 1tsp of dry yeast
Add 1 egg and whisk to incorporate
Add 200ml of milk
Whisk until a smooth batter is formed
Cover with cling film and let it proof over the kitchen counter for 30m
Add 2tbsp of extra virgin olive oil to a pan over medium heat
Spoon the batter onto the pan and cook both sides until golden brown. Transfer to a plate lined with a paper towel to dry the excess oil. Repeat until all the batter is cooked
Plate the pancakes and top with sour cream and maple syrup to taste. The racuchy is ready
