Rangpur Lime Purée
A delicious purée crafted from rangpur lime peels. This preparation can be used to enhance a diverse array of meals, from indulgent desserts like cheesecakes to savory dishes such as poultry and pork meals.
Peel <quantity>5</quantity> rangpur limes and add the peels to a pot. Reserve the limes
Cover the peels with water and place the pot over high heat
Bring to a boil and drain the peels. Cover with fresh water and repeat the process 4 more times to remove the bitter taste, discarding the last water
Add <quantity>250<unit>g</unit></quantity> of sugar and <quantity>250<unit>ml</unit></quantity> of water to a bowl. Stir to dissolve the sugar
Cover the drained peels with the water and sugar mixture in a pot. Place it over low heat and cook until the peels are translucent and soft
Transfer the peels to a blender and add the juice of the reserved limes. Reserve the syrup for other recipes
Blend on high speed until creamy and smooth
Transfer to a serving bowl. The rangpur lime purée is ready
