Nothing like a hearty, crispy savory Indian crêpe for breakfast! Rava Dosa is one of India’s most popular breakfast dishes. It's easy to dish out with no fermentation required, and it's perfect to pair with your favorite curry or chutney dip.
The ghee can be replaced with olive oil, butter, or even margarine.

Small dice 1 small onion
Trim, halve, and coarsely chop 2 small green chilis
Add 6tbsp of all-purpose flour and ¾cup of rice flour to a bowl
Add ½cup of semolina flour, 3tsp of cumin seeds, and ¼cup of yogurt
Add 1¼cup of water, in two parts, and whisk until completely combined
Add salt to taste, along with the diced onion and chopped chilis. Whisk to combine
Leave the bowl at room temperature for 15m to rest the batter
Roughly chop 1 bunch of spring onion
Roughly chop ¼bunch of coriander
Remove the stems of 2 small green chili and roughly chop them
Add the spring onion, coriander and chilies to a food processor and blend until smooth—if they don't fit all at once, divide in two parts. Add part of the ½cup of vegetable oil to help blend
Add the remaining herbs, ¼cups of cashew nuts, and 4 garlic cloves. Blend until smooth
Add the remaining vegetable oil and season with salt to taste. Blend until homogeneous. The spring onion pesto is ready
Melt 1tbsp of ghee on a nonstick pan over medium heat
Spread 1laddle of the dough around the skillet and grill both sides until fully cooked. Add more ghee, if necessary, and repeat with the remaining dough
Spread the Spring Onion Pesto to taste on each dosa
Top with red chili flakes and chopped coriander to taste. The rava dosa is ready
