Roasted Corn with Lime
The base for this recipe is one of the biggest Brazilian classics: sweet corn with butter or margarine by the beach, but with an Italian twist! Roasted Corn with Lemon is great for eating as an appetizer with bread, sticks and crackers, or even on a barbecue. Butter can be replaced with margarine, and you can use flaky salt to finish the dish.
Preheat a pizza oven to 400°C. If using a regular oven, preheat to the highest temperature
Preheat a cast iron skillet in the oven for 15m until fully heated
Add 2tbsp of extra virgin olive oil and 1 cup of canned sweet corn to the hot skillet
Roast for 3m until slightly golden brown
Add the juice of ½ lemon
Roast for 3-5m to evaporate the juice
Add 1tbsp of butter and stir
Roast for 5-10m until the butter has melted and the corn is golden brown
Add fresh rosemary to taste and adjust the seasoning if necessary. The roasted corn with lemon is ready
Grab some bread and enjoy!
