Romance in Oaxaca
Since the Pisco Sour is the representative cocktail of Peru, this recipe was created taking the essence of a sour with Mexican products, such as Tequila and Mezcal. An added sweetness, with an exquisite orange syrup and some spicy touches from chili peppers, will create an explosion of lemony and smoky flavors.
Wash and peel <quantity>1<unit>kg</unit></quantity> of orange and reserve the peels
Halve the oranges and squeeze the juice through a sieve into a cup until you have <quantity>400<unit>ml</unit></quantity> of juice
Transfer the juice to a saucepan over medium heat and add <quantity>400<unit>g</unit></quantity> of sugar
Stir until the sugar is dissolved and boil until reduced by half
Add the orange peels and turn of the heat. Let it infuse for 10m
Strain into a bottle. The orange cordial is ready
Place <quantity>30<unit>ml</unit></quantity> of blanco tequila and <quantity>22.5<unit>ml</unit></quantity> of mezcal in a cocktail shaker
Add <quantity>22.5<unit>ml</unit></quantity> of the Orange Cordial and <quantity>22.5<unit>ml</unit></quantity> of lime juice
Add <quantity>15<unit>ml</unit></quantity> of egg white and <quantity>2<unit>dashes</unit></quantity> of orange bitter
Shake vigorously for 15s
Fill the cocktail shaker with ice cubes and shake for 30s
Double strain the cocktail over a chilled coupe glass
