Romesco Sauce is a delicious Spanish sauce that is very versatile! It can be paired with grilled meats, roasted vegetables, or even fish.
This is the perfect sauce to take on a picnic, as it pairs very easily with various dishes, or to keep in your fridge for a few days!
Hazelnuts can be replaced with almonds or any of your preferred nuts!
Heat a skillet over high heat
Add 1 tbsp of extra virgin olive oil
Add ½ cup of hazelnuts and sautée until fragrant
Halve and roughly slice 3 canned piquillo peppers
Add the hazelnuts, along with the olive oil, and 1 tsp of nora chili flakes to a blender
Add 1 tsp of smoked paprika and 1 tbsp of extra virgin olive oil
Add ¼ cup of breadcrumbs
Finely grate 1 garlic clove and blend to break down the nuts into smaller pieces
Add the piquillo peppers and season with salt to taste
Add ½ tbsp of sherry vinegar and ½ tbsp of extra virgin olive oil
Blend on high speed until smooth and homogeneous. The romesco sauce is ready
Pair it with your favorite meat or vegetable and enjoy!
