Salsa Tatemada

Peel and cut <quantity>1</quantity> onion in quarters
Remove the stems from <quantity>6</quantity> chiles de árbol
Burn <quantity>5</quantity> plum tomatoes, <quantity>¼</quantity> of a large onion and <quantity>1</quantity> head of garlic in a pan over low heat
Hydrate <quantity>6</quantity> chiles de árbol by placing in a bowl and pouring <quantity>½<unit>cup</unit></quantity> of hot water on them
Turn the ingredients to ensure they are burned evenly
Peel the garlic cloves and add them back into the pan
When the ingredients are burned all over, transfer them to a bowl
Scrape off the burned parts of the pan and add to the bowl
Add chiles de árbol to the blender
Add some of the burned tomatoes and the onion
Blend at maximum speed
Add the rest of the ingredients and pulse until a bit chunky
Transfer mix to a serving bowl
Add a pinch of salt
