Set up a mandoline with a medium blade to cut strings
Pass the potato through the mandoline directly into a bowl fill with cold water
Strain the potatoes
Preheat 1L of vegetable oil to 160°C
Fry the potatoes in small batches until crisp, then place them in a bowl with a sieve to drain the excess oil. The shoestring potatoes are ready
Add them to your favorite dish. Enjoy!
