A homemade version of the classic Cuba Libre cocktail! Sí, Es Libre is a great cocktail with fresh seafood, spicy appetizers, fruit, charcuterie boards, or salads!
Add <quantity>¼<unit>cup</unit></quantity> of sugar to a pan
Add <quantity>1<unit>tsp</unit></quantity> of vanilla extract
Grate nutmeg to taste
Add <quantity>500<unit>ml</unit></quantity> of brewed yerba mate tea and mix it
Turn the heat on to medium, and let it boil until the liquid is reduced in half
Transfer the liquid to another recipient. The yerba mate syrup is ready
Fill a glass with ice cubes
Add <quantity>50<unit>ml</unit></quantity> of the Yerba Mate Syrup and <quantity>50<unit>ml</unit></quantity> of rum
Fill the remaining of the glass with <quantity>150<unit>ml</unit></quantity> of tonic water and <quantity>50<unit>ml</unit></quantity> sparkling water. Stir to combine
Cut <quantity>½</quantity> lime into wedges
Squeeze the juice out of 1 lime wedge into the cup, and add the wedge to the glass. Use a stirring spoon to push the lime wedge down
