Smoked and caramelized bone marrow that makes for a great appetizer or snack when served with some pita bread. It can even be a side along a grilled piece of meat.

You can replace the bay leaf with any other hard herb, such as sage or rosemary.

  • Light a grill to a high heat. Grill 2 split marrow bones on both sides until their insides are caramelized

  • Place 10 dried bay leaves directly on the embers. Cover the marrow bones with a grill lid or heat-proof bowl. Let it smoke for 4m

  • Remove from the grill and season with fleur de sel to taste. The smoked bone marrow is ready
