Smoked Mussels, Sobrasada & Fennel Seeds
Smoking mussels on the barbecue grill adds an extra dimension to an already delicious meal. The meaty sobrasada and the anise flavor of the fennel seeds work perfectly with the smokiness.
Light the grill
Peel and small dice <quantity>1</quantity> shallot
Drizzle a saucepan over medium heat with vegetable oil and add the diced shallot
Add <quantity>15<unit>g</unit></quantity> of fennel seeds and <quantity>100<unit>g</unit></quantity> of sobrasada
Stir until the sobrasada is cooked through
Add <quantity>1<unit>kg</unit></quantity> of mussels and stir
Add <quantity>100<unit>ml</unit></quantity> of pastis
Cover the saucepan and cook the mussels until they begin to open. Drain the mussels in a sieve over a saucepan and collect the juices
Add a handful of bay leaves to the grill
Place the smoking pan with the mussels and the lid over the grill. Smoke the mussels for 5m
Add <quantity>50<unit>g</unit></quantity> of butter to the sauce and stir to combine. Remove from the heat once the butter is completely melted
Plate the mussels and pour the sobrasada sauce on top. The smoked mussels, sobrasada & fennel seeds is ready
