Smoked Sausage & Stewed Kale
A traditional winter dish of boiled potatoes, kale stew and smoked sausage. It sounds and looks so simple, but is very big in flavour and depth. One of the most comforting dishes for cold days!
Remove stems from <quantity>600<unit>g</unit></quantity> of green kale
Boil salted water in pot
Blanch green kale for 2m, transfer to a tray and let cool
Trim, peel and chop <quantity>1</quantity> onion
Squeeze cooked kale to remove excess water. Coarsely chop
Melt <quantity>100<unit>g</unit></quantity> of butter on medium heat
Sweat onions until translucent
Add chopped kale. Stir to combine
Add <quantity>100<unit>ml</unit></quantity> of white wine. Stir to combine
Add <quantity>200<unit>ml</unit></quantity> of vegetable broth. Stir to combine
Add <quantity>2<unit>tbsp</unit></quantity> of spicy mustard. Stir to combine
Cook on low heat 15m until tender. Stir occasionally
Bring <quantity>250<unit>g</unit></quantity> of potatoes to a boil
Add salt to taste and cook for 25m on medium heat until tender
Let cooked potatoes cool until easy to handle. Peel and reserve
Add <quantity>2<unit>tbsp</unit></quantity> of rolled oats to kale stew
Add <quantity>250<unit>g</unit></quantity> of smoked sausage to kale stew
Add <quantity>100<unit>ml</unit></quantity> of water. Submerge sausage, cover and simmer 20m until cooked through
Remove sausages
In a serving bowl, plate the boiled potatoes, kale stew and cooked sausage
