Sorrel is readily available and used in many different cuisines around the world. The leaves are generally consumed when young. Its distinctive sour taste makes it unique and difficult to replicate.
Slice 1 bunch of sorrel
Transfer to a blender. Add ¾ cup of plain yogurt
Add ¼ cup of powdered sugar and 1 tsp of xanthan gum. Blend on high speed for 3m until smooth
Pass through a fine mesh sieve
Transfer to a 1 l whipped cream dispenser with 2 charges. Shake well and keep it refrigerated
The sorrel foam is ready. Use it to bring freshness to your desserts!
