A fresh, acidic and herbaceous yogurt foam. Perfect for bringing some freshness to any of your desserts, such as tarts, and when paired with a crumble and some fresh fruits!

Sorrel is readily available and used in many different cuisines around the world. The leaves are generally consumed when young. Its distinctive sour taste makes it unique and difficult to replicate.

  • Slice 1 bunch of sorrel

    Step 0
  • Transfer to a blender. Add ¾ cup of plain yogurt

    Step 1
  • Add ¼ cup of powdered sugar and 1 tsp of xanthan gum. Blend on high speed for 3m until smooth

  • Pass through a fine mesh sieve

    Step 3
  • Transfer to a 1 l whipped cream dispenser with 2 charges. Shake well and keep it refrigerated

    Step 4
  • The sorrel foam is ready. Use it to bring freshness to your desserts!
