Soy Milk & Parsley Mayo
A delicious vegan green mayo, ideal for enhancing burgers, wraps, dipping dumplings, fries, crudités, or just about anything!
Roughly chop <quantity>1<unit>bunch</unit></quantity> of parsley
Add <quantity>½<unit>cup</unit></quantity> of unsweetend soy milk, <quantity>2<unit>tbsp</unit></quantity> of nutritional yeast and <quantity>1½<unit>tsp</unit></quantity> of salt to a tall container
Add <quantity>2<unit>tsp</unit></quantity> of mustard and <quantity>2<unit>tsp</unit></quantity> of white wine vinegar
Add the chopped parsley and mix with a hand blender until combined
Add <quantity>¾<unit>cup</unit></quantity> of vegetable oil while blending, until emulsified. The soy milk & parsley mayo is ready
