Soy-Cured Yolk
This surprisingly easy recipe is full of flavors and can be used in salads or steak tartare! If the egg rests in the fridge for at least 12 hours and is dried on a paper towel, it can be grated.
Separate <quantity>1</quantity> egg yolk from the white. Carefully put the yolk in a bowl with <quantity>½<unit>cup</unit></quantity> of soy sauce
Spoon soy sauce over the yolk
Cover and let it rest in the refrigerator for 1h until lightly cured
The soy cured yolk is ready
Enjoy it in a salad or in a steak tartar!
