Spinach Purée is a very simple recipe, but extremely versatile. It can be used as a base for various preparations such as pasta doughs, soups, spreads, sauces, baked goods, and even on smoothies!
The Spinach Purée can also be served as a side dish. Just season according to your taste, serve with some grilled meat, and you’ll be set!
You can use different amounts of water and salt to blanch the spinach, as long as you keep the proportions.
It is a great recipe to stock on your freezer for whenever you feel like adding some spinach as a base for a recipe.
Add 3 tbsp of salt to a pot with 8 cups of water and bring it to a boil over high heat. Prepare a bowl full of cold water
Pick 1 kg of spinach leaves
Add the spinach to the boiling water and use a skimmer to submerge. Wait 30s and remove the leaves
Transfer the leaves to the cold water to cool down quickly
Transfer the leaves to a strainer over a bowl. Squeeze them to remove the excess water
Place the spinach leaves in a tall container. Mix with a hand blender on high speed until smooth
Enjoy using it as the perfect base for making pasta or spinach cream!
