The combination of ricotta and spinach is undeniably breathtaking. This filling is beautiful in filled pasta. It can also be used to stuff dough such as in puff pasty or hand pies.

  • Place water in a medium-large pot on high heat and bring to a boil

  • Prepare an ice bath

  • Submerge the blanched spinach in the ice bath until it is chilled

  • Strain and squeeze as much liquid from the spinach as possible
